Whole30 Recipe: Italian Sausage Frittata



Ingredients
1 lb pork sausage
1 tbsp coconut oil
1/2 onion, chopped
2 cloves minced garlic
1 bag spinach
2 tbsp fresh basil, chopped
red pepper flakes
10 eggs, whisked
salt and pepper
2-3 tomatoes

Directions
Preheat the oven to 375F. 
Heat the coconut oil over med-hi heat in a medium cast iron skillet (or other oven safe skillet). 
Cook the sausage in the skillet, breaking apart as it cooks. 
Add the onion, garlic, and spinach (a bit at a time), stirring frequently so that it's evenly distributed and the spinach wilts. 
Remove from heat. 
Sprinkle the basil and red pepper flakes on top and let it sit while you prepare the eggs.

In a large bowl, whisk the eggs with the salt and pepper and pour over the sausage mixture, covering evenly. 
Top with the tomato slices and more salt and pepper. 
Bake for 20-25 minutes, until the eggs are set in the middle and the edges start to brown.

Refrigerates well, but best served immediately.
