Whole30 Recipe: Fried Avocado

This is so easy, it's silly, and it's incredibly delicious! Quarter an avocado and use a spoon to scoop it out of the peel. On a plate, grind garlic salt and pepper and coat the flat sides in the seasonings. Heat olive oil in a non-stick skillet over medium-high heat. Once the oil is hot, place the avocado flat side down in the oil and check it every minute or so. Once it's brown and crispy, flip it "over" to the other flat side. After that side is done, you can flip it again to the rounded side and let that part cook a bit too, but it won't fry evenly, so don't worry about making it look pretty. Take it out of the pan and eat it while it's still hot.

This is so crunchy on the outside and creamy on the inside. It's also probably the best way I've ever eaten an avocado. I used this as a side dish, but I've also seen them in tacos (vegan/vegetarian friends, I'm looking at you!) and they'd probably be great on top of fish or on toast too. Please, do yourself a favor and get an avocado ASAP so you too can experience this awesomeness!
